DONNA'S HEALTHY GROUND MEAT &
VEGETABLE SOUP
 
1 lb. lean ground meat (beef or turkey)
2-4 cups of fresh chopped carrot, onion & celery combined
1-2 cups of frozen spinach or kale (use fresh if desired)
1/4 cup brown rice
2 (32 oz. ea.) cartons Swanson reduced sodium chicken broth (or use preferred broth)
1 (15 oz.) can chopped/stewed tomatoes
1-2 tablespoons olive oil
seasonings to taste - salt, pepper, garlic & onion powders, basil, Italian seasoning, parsley etc.

1. In a large cooking pot, brown ground meat in olive oil on medium heat and season to taste.

2. Add fresh chopped vegetables and cook with meat to slightly soften, about 2-3 minutes.

3. Add the 2 cartons of chicken broth.

4. Add the frozen spinach/kale, rice and can of tomatoes. Stir well. Add additional broth or water if needed.

5. Bring to a boil, then reduce heat to low/simmer and cover with lid.

6. Cook for about 1 hour or until vegetables and rice are tender. Add additional seasonings if needed.

7. Enjoy with a whole grain crusty bread and green salad for a complete meal!
