STRAWBERRY PARFAIT 
1 envelope unflavored gelatin
1/4 c. water
1 (10 oz.) pkg. frozen strawberries, thawed
1/2 c. frozen non-dairy creamer, thawed
1 tbsp. lemon juice
4 fresh strawberries for garnish

Dissolve gelatin in cold water, then heat. Puree strawberries and blend non-dairy creamer, lemon juice, gelatin. Chill in serving dishes. Garnish with fresh strawberries. Makes 4.
