CHIMICHANGA 
2 lb. beef stew meat
1 1/2 c. water
2 cloves garlic
2 tbsp. chili powder
1 tbsp. vinegar
2 tsp. oregano, crushed
1 tsp. salt
1 tsp. cumin
1/8 tsp. red pepper
12 (10") flour tortillas

In a medium saucepan add all 9 ingredients. Bring to boil. Cover, reduce heat, simmer 2 hours or until meat is tender. Uncover, boil rapidly 15 minutes or until water evaporates. Watch closely so meat doesn't stick. Remove from heat. Using 2 forks, shred meat very fine.

Meanwhile, wrap stack of tortillas in foil. Heat in 350 degree oven for 15 minutes. Spoon 1/4 cup meat into tortillas, wrap, fry until golden brown.
