BEET PICKLES 
2 c. sugar
1 1/2 c. vinegar
1/2 c. water
1/2 tsp. salt
Mixed pickling spices

Boil beets until tender. Drain and add cold water and skinned beets. Cut in desired size. Boil ingredients and pour over pickles and seal. Add the salt and pickling spices in jar (add about 1 teaspoon to each jar) before adding liquid.

Makes 2 quarts.
