PEACH COBBLER MUFFINS 
1 egg
1/2 c. sour cream
1/2 c. milk
1 tsp. vanilla
4 tbsp. oil
1 lg. can sliced peaches, drained and diced (can use 3 to 4 fresh peaches, peeled and diced)
2 c. flour
1/2 c. sugar
1 tbsp. baking powder
1 tsp. baking soda
1/4 tsp. salt

TOPPING:

1/4 c. flour
1/4 c. sugar
1/4 tsp. cinnamon
2 tbsp. butter

Preheat oven to 400 degrees. Grease 8 muffin cups. In bowl, combine egg, sour cream, milk, vanilla and oil. Stir in peaches. In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Pour into the peach mixture and stir until moistened. Fill muffin cups. Prepare topping using a pastry blender. Sprinkle the topping over muffin batter. Bake for 30 to 35 minutes.
