PUMPKIN BARS 
2 c. sugar
1/2 c. oil
1 can pumpkin (about 2 c.)
4 eggs
2 c. Bisquick
2 tbsp. cinnamon

Beat first 4 ingredients together, medium speed; for 1 minute. Stir in last 2 ingredients. May also add 1/2 cup raisins and nuts. Pour in greased jelly roll or cookie sheet with edge. Bake 25 to 30 minutes at 350 degrees. Frost with cream cheese frosting.

FROSTING:

3 oz. cream cheese
1/3 c. butter
1 tbsp. milk
1 tsp. vanilla

Beat until creamy (with rubber spatula). Add 2 cups powdered sugar. If consistency is coarse add a little more milk.
