CURRIED SHRIMP SALAD 
2 lbs. shrimp
1 c. water chestnuts
1/4 c. onion
1/4 c. celery
3/4 c. mayonnaise
2 tsp. curry powder
2 tbsp. soy sauce
1/2 c. toasted almonds for garnish
Mandarin oranges for garnish

Assemble ingredients. Arrange on lettuce leaves. Add garnish.
