OATMEAL DROP COOKIES 
2 c. all-purpose flour
3/4 c. brown sugar, firmly packed
2 eggs, unbeaten
1 1/2 tsp. vanilla
2 c. quick-cooking oatmeal
1 c. raisins, chopped dates or chocolate chips
3/4 c. chopped nuts, if desired
1/2 c. granulated sugar
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon
1/3 c. milk or buttermilk
1 c. soft shortening, butter (3/4 c. for soft cookies)

Set oven at 375 degrees to preheat. Sift together flour, soda, salt, cinnamon. Add oatmeal. Combine butter, sugars, eggs, vanilla in large mixer bowl. Cream on No. 5 speed a few seconds, then on No. 10 speed for 3 minutes. Stop mixer. Add milk, then flour mixture gradually while beating on No. 3 speed until blended. Add raisins and nuts. Beat on No. 4 speed for 1 1/2 minutes. Scrape bowl as necessary. Drop by teaspoonfuls on greased cookie sheet. Bake about 12 minutes or until brown. Makes about 5 dozen.
