ZUCCHINI QUICHE 
4 sm. zucchini, unpared
1 c. Bisquick baking mix
1/2 c. onion, chopped
1/2 c. parmesan cheese
2 tbsp. parsley, snipped
1/2 tsp. salt
1/2 tsp. seasoned salt
1/2 tsp. oregano
1/4 tsp. pepper
1 clove garlic, minced
1/2 c. oil
4 eggs

Thinly slice the zucchini and combine all ingredients in greased oblong pan. Spread evenly in pan. Bake at 350 degrees for 25 minutes or until brown. Cut into 2" x 1" pieces.
