GREEN BEANS WITH PARSLEY AND
MINT
 
1 1/2 lbs. green beans, trimmed
1/4 c. olive oil
3 tbsp. fresh mint, minced
3 tbsp. fresh parsley, minced
Salt and pepper to taste
4 tsp. grated lemon peel
2 tbsp. fresh lemon juice

Cook beans in a large saucepan of boiling water until just tender. Drain. Refresh in bowl of ice water. Drain well. Transfer beans to a large bowl. Mix in oil, mint, parsley, salt and pepper. Just before serving, mix in lemon juice and grated lemon peel. Serve at room temperature. Makes 6 servings.
