SCANDINAVIAN COOKIES 
1 c. flour
1/4 c. brown sugar
1/4 c. nuts, chopped
1 egg, separated
1/2 c. shortening
1/4 c. coconut, chopped
1 tsp. vanilla
Jelly

Cream shortening until soft. Blend in sugar. Add egg yolk, beat until light. Add flour and vanilla. Mix and roll into small balls 1 inch in diameter. Dip in egg white, then roll in chopped nuts and coconut. Place on greased cookie sheet, make depression in center. Bake in 300 degree oven for 5 minutes. Repress centers, bake 10 minutes longer. Cool slightly and fill centers with jelly. Makes 1 dozen.
