VEGETABLE-CHEDDAR SALAD 
Makes 2 servings.

2 c. broccoli florets, blanched
1 c. sliced mushrooms
2 oz. sharp Cheddar cheese, shredded
2 tsp. sunflower seed
1 tbsp. each minced fresh chives, lemon juice and olive oil
1/4 tsp. each garlic powder and powdered mustard
1/8 tsp. each salt and pepper

In salad bowl combine first 4 ingredients. In small bowl combine remaining ingredients; pour over salad and toss to coat. Cover and refrigerate for 1 hour.

Freeze-dried chopped chives may be substituted for the minced fresh.

Each serving provides: 1 Protein Exchange; 3 Vegetable Exchanges; 1 1/2 Fat Exchanges; 20 calories Optional Exchange.

Per serving: 250 calories, 13 g protein, 18 g fat, 11 g carbohydrate, 357 mg sodium, 30 mg cholesterol.
