SOUTHERN FRIED CHICKEN 
2 fryer chickens, cut up

BATTER:

2 eggs, beaten
2 tbsp. water
2 tbsp. grated cheese (Romano or Parmesan)

COATING MIX:

1 c. flavored bread crumbs
1/2 tsp. garlic powder
1/4 tsp. paprika
1/2 c. grated cheese
Salt and pepper to taste

Sprinkle chicken with salt and pepper and dredge in flour. Beat together 2 eggs, water, and 2 tablespoons cheese; set aside. Combine crumbs, garlic powder, paprika, grated cheese, salt, and pepper; mix together. Dip prepared chicken pieces into egg mixture and then into the crumb mixture and set on waxed paper.

In large skillet, heat 1/2 inch of oil. Start frying chicken pieces. Fry and turn chicken pieces until golden brown on all sides. Serve 6.
