SOLE ROLL - UPS 
1/3 c. butter
1/3 c. lemon juice
1 1/2 c. cooked rice
1 (10 oz.) pkg. frozen chopped broccoli
1 c. shredded Cheddar cheese (4 oz.)
Salt & pepper to taste
8 fish fillets

Preheat oven to 375 degrees. In small saucepan melt butter. Add lemon juice, salt and pepper. Set aside.

In medium bowl combine rice, broccoli, cheese and 1/2 of butter-lemon mixture. Mix well. Divide broccoli mixture equally among fillets. Place filling at one end of fillet and roll-up and place seam side down in greased shallow baking dish. Pour remaining butter and lemon sauce over roll-ups. Bake 25 minutes or until fish flakes. Garnish with paprika. Makes 8 servings.
