HAMBURGER SOUP 
3 tbsp. butter
1 med. onion, chopped
1 1/2 lb. lean ground beef
1 (28 oz.) can tomatoes
2 bouillon cubes
1 qt. water (4 c.)
4 carrots, diced
4 celery tops, chopped
Parsley to taste
1 1/2 tsp. thyme
Dash of pepper
1 tbsp. salt
1/2 c. barley

Saute onions in butter. Add ground beef; brown and drain. Add all other ingredients except the seasonings. Simmer covered for 1 hour or until carrots are done. Add seasonings during last 15 minutes.
