CRISP CRUSTED BAKED CHICKEN 
1 (3 to 3 1/2 lbs.) chicken or 6 to 8 chicken breasts
1 egg
2 tbsp. milk
1 c. instant potato flakes
1 tsp. garlic salt (optional)
1/4 c. grated Parmesan cheese
1/4 c. butter

Beat egg and add milk. Mix potato flakes, salt, and cheese in a shallow bowl. Roll chicken first in the egg mixture and then in the potato flakes. Melt butter in shallow baking pan. Roll coated chicken in butter and place skin side up in pan. Bake at 400 degrees for 45 to 50 minutes. Place on serving plate and garnish with celery leaves.
