CORNBREAD MUFFINS 
1 c. flour
1 c. plain cornmeal
1 tsp. salt
1 tbsp. sugar
1 1/2 c. milk
3 tbsp. shortening, melted
1 egg
2 tsp. baking powder

Sift dry ingredients and add milk, shortening and beaten egg. Bake at 375 degrees about 25-30 minutes until lightly browned. Use 9-inch square greased pan. Serves 8.
