SOUTHERN CORNBREAD MUFFINS 
2 c. corn meal
1/3 c. flour
2 tbsp. sugar
1/2 tsp. salt
1 tsp. baking soda
1 3/4 c. buttermilk
1 egg, beaten
2 tbsp. oil

Combine first five ingredients in large bowl, mixing well. Combine buttermilk, egg, and oil, mixing well. Add to dry ingredients, stirring until moistened. Spoon into greased muffin pans or use Pam. Bake at 425 degrees for 15 minutes or until edges begin to brown. Yield: 1 dozen.
