MINT CANDY 
12 oz. chocolate chips
1/2 c. butter
1 1/8 c. sifted powdered sugar
2 med. eggs
2 tsp. vanilla
2-3 tsp. mint flavoring

In double boiler (or microwave), melt the chocolate chips. Set aside to cool.

Cream together the butter and powdered sugar. Add the eggs (if using large eggs, use slightly more powdered sugar) and beat well. Add the vanilla and mint flavorings (3 teaspoons mint is best). Add to cooled chocolate and beat well. Drop by teaspoonfuls onto waxed paper or a cookie sheet. Cool and store in refrigerator.

OPTIONAL: Try adding coffee liqueur or rum in place of mint and at least 1 teaspoon of vanilla.

Since microwave ovens vary in power, you may need to adjust your cooking time.
