24 HOUR OMELET 
7 slices white bread
3/4 lbs. Longhorn or Monterey Jack cheese
8 eggs
3/4 tsp. salt
2 1/2 c. milk
3/4 tsp. mustard
Dash pepper
1 c. or more thin cubes or ham

Butter bread on one side. Cut into 1-inch cubes, place buttered side up in 9 x 12-inch pan. Beat eggs, milk, salt, mustard and pepper. Pour over bread, add cubed ham and grated cheese. Cover with foil and refrigerate overnight. Bake covered in 325 degree oven for 1 1/2 hours. Uncover for last 10 minutes of baking time. (Cheese may stick to foil if piled too high). Serves 10-12.
