SHRIMP SALAD 
1 1/2 c. cooked shrimp
1/4 c. mayonnaise or salad dressing
1 tbsp. onion, minced
1 c. tender celery, finely chopped
2 tbsp. sweet pickle, chopped
Salt and pepper to taste

If shrimp is fresh, cook only until pink. Do not over cook. The shrimp will be tough. Dice the cooked and cleaned shrimp. Add all other ingredients and toss to mix. Chill and serve on lettuce leaves. Serves 6.
