Cook chicken stock all day, breasts work well. Cut into small pieces. When chicken is simmering, add celery, onions, parsley, garlic salt, salt and pepper and endive. Add tiny meatballs made with some Parmesan cheese. When soup boils, add Parmesan cheese and eggs and drop into soup. Make pasta separately (acini de pepe or tiny seed-like pasta). Add pasta just before serving. |
