OKRA FRITTERS 
1/4 c. cornmeal
1/4 c. flour
1/2 c. finely chopped onions
1/2 c. Pet milk
1 large egg, slightly beaten
3 tbsp. chopped fresh parsley
2 tbsp. grated Parmesan cheese
1/2 tsp. salt
1/4 tsp. red pepper
2 c. sliced fresh okra
vegetable oil
salt

Combine first 9 ingredients; sir in okra. Pour oil to the depth of 2 inches in a Dutch oven. Heat to 350°F and drop mixture by tablespoonfuls into oil, until golden brown, turning once. Drain on paper towel. Sprinkle with salt. Serve immediately.
