THREE CHEESE MANICOTTI 
1 1/2 c. water
1 (8 oz.) can tomato sauce
1 (1 1/2 oz.) pkg. spaghetti sauce mix
2 c. shredded Mozzarella cheese
1 c. ricotta or cottage cheese
1/2 c. Parmesan cheese
2 eggs, beaten
1/2 tsp. salt
1/8 tsp. pepper
8 manicotti shells

Combine water, tomato sauce, spaghetti sauce mix, and hamburger in a small saucepan. Simmer, uncovered, 10 minutes. Combine 1 cup Mozzarella, ricotta, Parmesan, eggs, salt and pepper. Stir gently and set aside. Cook manicotti shells according to package directions, drain. Stuff cheese mixture into shells using 1/4 cup for each shell. Pour 1/2 cup sauce in a shallow 2 quart casserole, arrange shells in sauce and pour remaining sauce over top. Sprinkle with remaining Mozzarella. Bake, uncovered, at 350 degrees for 25 to 30 minutes. Yield: 4 servings.
