PINEAPPLE UPSIDE DOWN SKILLET CAKE | |
4 egg yolks 1 tsp. vanilla 1 c. flour 3 tbsp. butter 1 (15 oz.) can pineapple, any kind 1 c. granulated sugar 1 tsp. baking powder 3 tbsp. hot water 1 c. brown sugar Beat the yolks. Add sugar, hot water and flour sifted with baking powder. Add vanilla. Fold in stiffly beaten whites of the 4 eggs. In a skillet, put butter and brown sugar. Stir over low heat until it's dissolved. Add drained pineapple. Pour the cake batter over this pineapple mixture. Bake 30-45 minutes in 350 degree oven. Then turn cake upside down on a plate and serve. |
