SPANISH RICE 
8 strips of bacon
1 diced onion
3 or 4 c. of cooked rice
1 can tomato sauce (medium)
1 can tomato paste (small)
1 can stewed tomato (medium)
1 c. sour cream
Cheese, American sliced in strips

Fry bacon until crisp. Remove from pan, save drippings. Saute onions in bacon grease. Combine rice, sauce, paste and stewed tomatoes, sour cream, onions and crumbled bacon. Put in casserole dish. Lay cheese on top to cover. Bake at 350 degrees for 40 to 60 minutes.
