SPANISH RICE AND PEPPERS 
1 sm. onion
1/2 c. green pepper
3 tbsp. butter
2 c. stewed or canned tomatoes
3 lg. green peppers, sliced in 1/2
1/2 tbsp. chili powder
2 tsp. sugar
3 c. hot boiled rice
Salt and pepper to taste

Saute onion and green pepper for 5 minutes in butter. Add tomatoes, sugar, salt and pepper and rice.

Place 6 pepper halves in shallow baking pan. Pour ingredients over top and cook for 1 hour at 350 degrees. Serve with grated Parmesan cheese sprinkled on top.
