PINE NUT COOKIE 
1/2 c. sugar
1/2 c. confectioners' sugar
1/4 c. unsifted flour
1/8 tsp. salt
1 can (8 oz.) Solo almond paste
2 eggs, whites lightly beaten
Confectioners' sugar

Grease two cookie sheets.

Sift sugar with flour, salt and set aside.

In small bowl break up almond paste with wooden spoon until well blended smooth.

Stir in flour mixture until well blended. Drop mixture round teaspoon, 2 inches apart on cookie sheet. Lightly press each cookie with pine nut.

Preheat oven 300 degrees. Bake 20 to 25 minutes until golden. Remove to wire rack, cool. Sprinkle with confectioners' sugar.
