AUNT POLLY'S CHOW CHOW | |
1 med. head cabbage, grated 1 med. onion, finely chopped 1 sm. green pepper, chopped 1 sm. can red pimento or 1 sm. red pepper, chopped 1/2 c. honey 1/2 c. vinegar 1/2 c. cooking oil 2 tsp. sugar 2 tsp. salt Combine cabbage, onion, green pepper and red pepper. Set aside. Combine honey, vinegar, cooking oil, sugar and salt in sauce pan. Bring to hard boil. Pour over vegetables and mix well. Pack tightly in 1 quart jars and cover. Store in refrigerator for 3 days before serving. Can be kept refrigerated for at least a month - taste improves with age. Makes 2 quarts |
