NEW ORLEANS PRALINES | |
1 1/2 c. white sugar 1 1/2 c. light brown sugar 1 c. evaporated milk 2 tbsp. butter 2 tsp. vanilla 2 c. pecans (whole) Mix first 3 ingredients in 2 quart saucepan. Cook on medium heat to boiling while stirring using a wooden spoon. Cook to soft ball stage. Remove from heat. Add butter, then vanilla, beating. Add pecans. Beat a couple of minutes until slowly runs down side of pot. Spoon onto waxed paper (use cloth under wax paper to prevent sticking to table top) to make individual candies, 2-3 inches in diameter. Makes a few dozen this size. |
