BROCCOLI CASSEROLE 
1 onion
2 1/2 sticks butter
2 pkgs. broccoli
2 c. cooked rice
1 can cream of chicken soup
1/2 lb. grated Cheddar cheese
1 c. Ritz cracker crumbs
Salt and pepper

Saute onion in 1/2 stick of butter. Cook 2 packages of broccoli. Drain and set aside. Add 2 cups of cooked rice to onion. Add 1 1/2 sticks of butter. Add 1 can of cream of chicken soup. Add salt and pepper to taste. Place broccoli in casserole dish and pour above mixture over broccoli. Top with grated Cheddar cheese. Melt 1/2 stick butter. Add Ritz cracker crumbs. Sprinkle on top of cheese. Heat until cheese melts.
