EGGPLANT FRITTERS 
1 c. flour
1 1/2 tsp. baking powder
2 tsp. sugar
1/4 tsp. salt
1/3 c. milk
1 egg
2 c. cooked eggplant

Sift dry ingredients. Beat egg and milk together, add slowly rest of ingredients; stir well. Drop by spoonful in hot deep fat. Cook until golden brown.
