PASSOVER HONEY CAKE | |
3 eggs 1 c. sugar 1 c. honey 1 c. hot coffee 2 c. matzo cake meal 1/2 c. potato starch 2 tsp. baking soda 1 tsp. ginger 1 tsp. cinnamon 1/2 c. vegetable oil 2 tbsp. chopped nuts Beat eggs well, adding sugar gradually. Blend honey into hot coffee; cool; add to egg mixture. Sift dry ingredients and add to egg mixture with oil and nuts. Blend thoroughly. Pour into an oiled 13 x 9 inch pan or use 2 (9 inch) round pans. Bake at 325 degrees for 30 minutes. Increase heat to 350 degrees and bake 15 minutes more. Cool in pan. |

BTW not strictly Kosher here, but I understand that if not derived from grain, baking soda and even baking powder can be Kosher for Passover. I used stuff I had around the house.
