PASSOVER HONEY CAKE 
3 eggs
1 c. sugar
1 c. honey
1 c. hot coffee
2 c. matzo cake meal
1/2 c. potato starch
2 tsp. baking soda
1 tsp. ginger
1 tsp. cinnamon
1/2 c. vegetable oil
2 tbsp. chopped nuts

Beat eggs well, adding sugar gradually. Blend honey into hot coffee; cool; add to egg mixture. Sift dry ingredients and add to egg mixture with oil and nuts. Blend thoroughly. Pour into an oiled 13 x 9 inch pan or use 2 (9 inch) round pans. Bake at 325 degrees for 30 minutes. Increase heat to 350 degrees and bake 15 minutes more. Cool in pan.

Excellent results, first time. Brings back fond memories of grandma's honey cake, from back in the old country (Queens, NY). Used 25% less sugar as we like it not so sweet; but it's still plenty so. Added some sliced almonds on top before baking. Easy recipe, 15 mins and it was in the oven. Thank you!

BTW not strictly Kosher here, but I understand that if not derived from grain, baking soda and even baking powder can be Kosher for Passover. I used stuff I had around the house.
