BEAN PICADILLO 
1 sweet green pepper, chopped
2 tbsp. vegetable oil
1 lg. onion, chopped
1 apple, pared, cored & chopped
1 clove garlic, chopped
1 tbsp. chili powder
1/4 tsp. cinnamon
1 c. crushed tomatoes
1 1/4 c. bean cooking liquid
1 1/2 tsp. salt
1/4 tsp. pepper
3 c. cooked kidney beans
1/4 c. sliced black olives
2 tbsp. raisins
2 tbsp. slivered almonds

Saute pepper in 1 tablespoon oil until tender. Remove and reserve. Saute onion, apple and garlic in 1 tablespoon oil until tender. Stir in chili powder and cinnamon, tomatoes, bean liquid, salt, pepper. Cover and simmer 10 minutes.

Add beans, olives, raisins, almonds, reserved green pepper. Heat to serve.

NOTE: 1 1/4 cups dried beans.

Makes 4 servings at 68 cents each. Nutrient Value Per Serving: 345 calories, 14 g. protein, 13 g. fat, 48 g. carbohydrate, 925 mg. sodium, 0 mg. cholesterol.
