PECAN MERINGUES 
1 egg white
3/4 c. brown sugar
1/2 tsp. vanilla
2 c. pecan halves

Beat egg white until very stiff, adding the brown sugar as you beat the egg white, add vanilla. Then fold in nuts. Cover each nut well and place on greased baking sheet. Bake for 30 minutes at 250 degrees. Turn off oven and let stay in oven for 30 minutes. Cool. Store in airtight container. They freeze well.
