PECAN MERINGUES 
1 egg white
3/4 c. light brown sugar
2 c. chopped pecans
1 tsp. vanilla

Beat egg white until stiff peak forms. Add brown sugar and vanilla. Beat until smooth. Add nuts and mix until coated. Spoon onto foil lined cookie sheet. Cook 30 minutes in 250 degree oven. Turn off heat and leave in the oven for another 30 minutes.
