PARMESAN FLEECED CHICKEN 
1 (3 lb.) chicken, cut up
3 tbsp. melted butter
4 tbsp. lemon juice
1 med. clove garlic, minced
1/2 tsp. dried tarragon leaves
1 c. fresh rye bread crumbs
1/2 c. Parmesan cheese
1/4 c. minced fresh parsley

Remove any excess fat and skin from chicken. Combine butter, lemon juice, garlic, and tarragon. In a bowl, combine bread crumbs, Parmesan cheese, and parsley. Dip chicken in butter. Roll in crumbs. Coat each piece well, patting with hands. Place on large baking sheet. Drizzle with remaining butter. Sprinkle with extra cheese. Bake at 350 degrees for 40-50 minutes or until chicken is tender and golden brown. Serves 4.
