SCOTT'S TERIYAKI JERKY | |
1 to 1 1/4 cups Teriyaki sauce / marinade (I use Butcher Block brand) 1/2 cup pineapple juice 1 rounded tsp. coarse ground black pepper 1 tsp. salt 1 to 2 lb. beef or wild game, cut in small thin strips Mix Teriyaki, pineapple juice, pepper, and salt in a bowl. Prepare meat in small strips removing all fat and add to marinade. Allow meat to marinade overnight (covered in the refrigerator). Dehydrate meat according to your machines recommendations. Allow meat to cool and then place in bags and shake a small amount of salt and ground pepper in each bag. Note: I have tried many different prepared Teriyaki sauces and they all produce VERY different results. The Butcher Block brand is by far the best I've tried for making jerky. The jerky has a pleasant sweetness with a little kick from the ground pepper. Everyone who tries this says it's the best home made jerky they have ever had - and it couldn't be easier to make.
