OATMEAL COOKIES 
1 c. shortening
1 c. light brown sugar, packed
1 c. white sugar
2 eggs
1 1/2 c. flour
1 tsp. baking soda
1/2 tsp. salt
2 tsp. vanilla or almond extract
3 c. 3 Minute Oats
1 c. pecans, chopped

Cream shortening and sugars. Add 2 eggs and beat until fluffy. Add flour that has been sifted with salt and soda. Mix well and add vanilla, oats and pecans. Drop on greased baking sheets and bake at 350 degrees until lightly browned (about 8 minutes). These are best chewy.
