JAMBALAYA 
2 c. shrimp, deveined & peeled
4 c. hot smoked sausage
2 bell peppers
2 stalks celery
3 bay leaves
Salt & pepper
Mushrooms
Dash of thyme
Tomato paste
2 onions
2 cloves garlic
Dash of tarragon
2 c. ham

Put tomato paste, thyme, salt and pepper, garlic, tarragon and bay leaves in "big" pot. Add shrimp, celery and mushrooms to pot.

In frying pan (large), fry ham, sausage, bell pepper and onion. Add to pot with 2 cups of water and simmer away. Serve over rice.
