CAKE:

1 box yellow cake mix
4 eggs
3/4 c. oil
1 (10 oz.) can mandarin oranges plus juice

Mix all cake ingredients well. Pour into 2 greased and floured 8 inch cake pans (can use 1 long cake pan or Bundt cake pan). Bake at 350 degrees for 35-40 minutes or until done.

FROSTING:

1 can of either pineapple crushed plus juice, cherries or strawberries
1 pkg. instant vanilla pudding
1 (9 oz.) bowl Cool Whip

Mix all ingredients together and frost top and sides (and in between cake layers). Sprinkle with chopped walnuts or coconut if desired. Keep refrigerated.
