CHICKEN AND FRUIT SALAD | |
4 c. diced cooked chicken 15 oz. can pineapple chunks, drained 1 c. chopped celery 11 oz. can mandarin oranges, drained 2 c. seedless green grapes 1/3 c. sliced ripe olives 1/2 c. chopped green pepper 1 c. cashews 1 c. mayonnaise 1 tbsp. prepared mustard 5 oz. can chow mein noodles Lettuce leaves In a large bowl, combine chicken, pineapple, celery, oranges, olives, green peppers, grapes and cashews. Blend mayonnaise and mustard; toss gently with chicken mixture. Cover and chill several hours. Just before serving, mix in chow mein noodles. Turn salad into lettuce - lined bowl. Yields 8 servings. |
