CHICKEN FRUIT SALAD 
2 c. chicken, cooked and diced
2 tbsp. lemon juice
1/2 tsp. salt
1 c. celery, chopped
1 c. seedless green grapes or 1 c. pineapple chunks
2 hard-boiled eggs, chopped (optional)
1/2 c. mayonnaise
Salt and pepper to taste
1/3 c. almonds, slivered and toasted, or pecans
1 tsp. onion, chopped
1 tsp. curry

Sprinkle chicken with lemon juice and salt and chill several hours. Add remaining ingredients and serve in cantaloupe halves, garnished with fresh strawberries, or in fresh pineapple halves or quarters. Serves 4-6.
