APPLE CRUMB PIE | |
1/2 c. sugar 1/4 c. brown sugar 1/2 c. flour 1/3 c. butter FOR THE FILLING: 4-5 tart apples (Granny Smith or Winesaps make good pie) 1/4 c. sugar (or up to 1/2 c. if you like your pie sweeter) 2 tbsp. flour 1 tsp. cinnamon For the Crust: Pillsbury "Ready Crusts" are convenient and very good, but use your own favorite pastry recipe if you'd rather. You'll need an unbaked, single crust for a 9 inch pie. Preheat oven to 450 degrees. Make the crumbs by placing all ingredients in a bowl and working with a pastry blender, forks, or with your fingers until crumbs are formed. Line a 9 inch pie pan with pastry and crimp the edges with fingers to form a raised edge. In a small bowl, combine the flour, sugar and cinnamon for the filling. Peel and core the apples and cut first into quarters then into slices. Don't slice too thin; divide each quarter into 3 or 4 slices. Arrange apple slices in the pan, sprinkling with the flour-sugar-cinnamon mixture between layers. Pour crumbs over filling and spread evenly to edge of crust. Bake at 450 degrees for 10 minutes then reduce heat to 350 degrees and continue baking for another 40 minutes. |
