NO-PEEL POTATO CASSEROLE 
1 c. hot water
1 packet dried onion soup mix
1 cube melted butter
1/4 tsp. pepper
8 med. potatoes, unpeeled and cubed 1/2 inch
Parsley flakes

Combine water, soup mix, butter and pepper. Mix well. Add potatoes. Place in greased 2 quart casserole dish. Bake, covered at 350 degrees approximately 2 hours. Stir occasionally. Uncover during last 30 minutes, sprinkling parsley on at that time.
