ZUCCHINI FRITTATA 
1 med. zucchini
1 green onion
6 eggs
1/2 c. Parmesan cheese

Beat eggs. Add Parmesan cheese. Slice zucchini in 1/4 inch slices. Slice green onion thin.

Saute onions and zucchini in a Teflon oven-proof skillet. Add the egg mixture. Stir for about 10 seconds. Place skillet in 350 degree oven for 8 to 10 minutes until eggs are set. Turn out on plate. Sprinkle with fresh black pepper.
