CHOCOLATE CHEESECAKE 
1 1/4 c. graham cracker crumbs
1 tbsp. sugar
1/4 c. butter, melted

For crust, butter sides and bottom of spring-form pan. Mix crust ingredients and press on sides and bottom.

CHEESECAKE:

1/3 c. flour, sifted
Pinch of baking soda
1/4 tsp. salt
8 oz. sweet cooking chocolate
3 lg. eggs
3/4 c. sugar
2 (8 oz. ea.) pkgs. cream cheese (at room temp.)
2 c. whipping cream
1 tsp. vanilla

Sift flour, baking soda and salt, and set aside. Melt chocolate (cool slightly). In small bowl, beat eggs until thickened and lemon colored. Beat in sugar, one tablespoon at a time.

In large bowl, beat cream cheese until soft and fluffy. Add 1 1/4 cup of cream and vanilla, and beat until whipped cream consistency. Blend in cooled chocolate. Fold in egg mixture, sift in flour mixture, folding all in. Put in prepared pan.

Bake at 325°F for 1 hour and 5 minutes (top will crack). Remove sides, cover and chill. Use remaining whipping cream spread over top of cake.
