Sassafras leaves

Gather sassafras leaves in August. Pick leaves off of branches; put leaves in an old pillow slip. Hang outside to dry, but not in full sun. Let dry until very brittle.

Grind (on a dry day). Grind twice in meat grinder. Sift; discard all ruff branches and stems. Use only the powder. Store in tight closed jars. Use in gumbos.
