SOUTHERN CORNBREAD 
2 c. white cornmeal
1 tsp. salt
2 c. buttermilk
1 tsp. baking soda
2 eggs, beaten
1/4 c. bacon drippings or oil

Combine cornmeal, soda and salt. Stir in egg and buttermilk. Heat bacon drippings in an 8" iron skillet until very hot; add drippings to batter, mixing well. Pour batter into hot skillet or greased muffin pan and bake at 450 degrees about 25 minutes or until golden brown.
