CHICKEN & NOODLES
1 whole chicken, boiled, keep juice
3 eggs
1/4 tsp salt
1/2 tsp baking powder
flour enough to make stiff dough
3 tbsp milk

Cook chicken, debone and cut in small pieces. Set aside.

Put three eggs in a bowl and beat with a fork, add milk, salt and baking powder. Gradually add flour. Stir until thick. Place on flour on a large cutting board. Keep kneading and adding flour until you have a very stiff dough that does not stick to your hands. Roll out with a rolling pin thin and either roll up or layer to cut thin slices. Separate slices and add flour so they will dry, about one hour.

In the meantime, put the chicken juice in a pan and heat. You can add water, chicken broth, butter, salt & pepper to taste. You can also add chicken boullion for extra flavor. Make sure you have plenty of liquid to put the noodles in to cook.

Gradually add noodles and stir so they separate and cook well. It will take awhile, so stir once in awhile and don't cook too fast, use medium heat so they won't stick and burn on the bottom. I use a non stick pan. When the noodles are done, add the chicken, taste and add whatever is needed.
